Mussels with hollandaise sauce on white wholegrain bread

Toast the white bread in a toaster, remove the crust and cut into the desired shape. Top the toasted bread with ¼ tsp of hollandaise sauce or mayonnaise. Thinly slice the cucumber using a peeling knife. Thinly slice the radish, then marinate together with the cucumber for about 15 minutes. Place the meat of a mussel onto the mayonnaise, roll up a cucumber slice and a radish slice and place next to the mussel on the mayonnaise. Garnish with a parsley leaf.

An excellent choice for both festive occasions and everyday meals. Heat them up, eat them cold or use them in a range of meals.
