A colourful snack – seafood with Brussels sprout and hollandaise sauce on black bread
Toast the bread in a toaster, remove the crust and cut into the desired shape. Put ¼ teaspoon of mayonnaise on the bread, thinly slice the radish. Marinate the radish for about 15 minutes. Place a radish slice on the bread and mayonnaise. Remove the outer leaves of the Brussels sprout – you can use these as a ‘bowl’. Place a Brussels sprout leaf on the radish and fill with the seafood mix. Garnish with chopped chives.
