• Chicken & shrimp stir-fry

Shrimp stir-fry for four

A healthy Asian-style lunch – shrimp stir-fry with Marwi shrimp.

185 g tiger shrimp with chili & garlic in oil
100 g red bell pepper
100 g yellow bell pepper
60 g scallions or leek
300 g spaghetti or rice noodles
100 g whipped cream or coconut milk
light soy sauce
lime

Drain the oil from the shrimp and pour it onto a wok, heat, add the sliced bell peppers, scallions/leek and shrimp. Add a bit of light soy sauce and heat for a minute while constantly stirring. Add the boiled spaghetti and cream or rice noodles and coconut milk, mix well, then heat some more while stirring from time to time, and serve. Sprinkle with some fresh chopped coriander and lime juice, if desired.
