Shrimp with guacamole on tortilla chips
A Mexican-style snack – shrimp with guacamole on tortilla chips.
juice of ½ lime
2 tbsp olive oil
1 small chili pepper
salt and pepper
Clean the avocado, mash with a fork, add the lime juice, salt, chili pepper and olive oil, then cut the shrimp into three pieces and mix into the avocado mash. Place the guacamole on tortilla chips, then garnish each chip with some chili pepper and a whole shrimp.
Drain the shrimp. Set aside some whole shrimp equal to the number of snacks you wish make. Cut the rest of the shrimp into four pieces. Clean two avocados and mash with a fork. Mix the sliced shrimp, lime juice, olive oil and finely chopped chili pepper into the mashed avocado and season with salt and pepper. Place the shrimp and avocado mixture onto chips using a spoon, then garnish with a thin chili pepper slice, one whole shrimp and a parsley leaf.
