A bite-sized snack – shrimp with vegetables on toasted white wholegrain bread.

Toast the white bread in a toaster, remove the crust and cut into the desired shape. Top the toasted bread with ¼ tsp of hollandaise sauce or mayonnaise. Thinly slice the celery using a peeling knife, then fold into a round ‘dish’ between your fingers. Place the celery on the bread, fixing it in the sauce. Fill the celery roll with shrimp, then garnish with chopped chives and beet sprouts. For seasoning, sprinkle with herb-infused oil.
