Spicy shrimp omelette
Spicy shrimp omelette – a scrumptious and healthy breakfast with Marwi shrimp This is a variation of a recipe from Health With Food, the original recipe is available here.
3 tsp extra virgin olive oil
1 tbsp chili garlic sauce
80 g Marwi hand-peeled shrimp
75 g red bell pepper, thinly sliced
30 g fresh scallions
4 egg whites
2 eggs
freshly ground black pepper, to taste
a pinch of salt
On a non-stick pan, heat the chili garlic sauce and 2 tsp of extra virgin olive oil. Add shrimp and bell peppers and cook until almost ready. In a separate bowl, mix the eggs and egg whites with a dash of water, season with salt and pepper, then beat until fluffy. Add another teaspoon of oil to the shrimp on the pan, then add the beaten egg mixture. Sprinkle the omelette with fresh scallions Cook until the egg has almost hardened, then turn the omelette over and cook on the other side. Place onto plates, garnish as desired and serve.
