A zesty snack – tiger shrimp with beet sprouts in hollandaise sauce on cucumber slices.

Scrape the cucumber with a fork lengthwise to cut furrows through the peel. Cut the cucumber into roughly 2 cm thick slices. Make a cavity for the sauce in the cucumber slices using a spoon. Fill the cavities with about ½ teaspoon of hollandaise sauce or mayonnaise, place a shrimp in the sauce and garnish with beet sprouts and sliced chili pepper.
