Toasted black bread with shrimp and leek
A snack both attractive and delicious – shrimp with mayonnaise and leek on toasted sliced black bread.

Toast the bread in a toaster, remove the crust and cut into the desired shape. Spread ¼ tsp of mayonnaise on the toast. Cut the leek into 2 cm thick rings. Remove the two outermost layers of the leek. Place upright in a small pot. Add water to the pot until it covers the leek. Simmer on very low heat for 10 minutes until the leek is soft. Place a leek ring on the toast, fill with the shrimp and olive mixture and garnish with a chervil or parsley leaf.
